Spicy Salmon Loaf
This one kills two birds with one stone: something to do with flax meal, and a way to make canned salmon palatable (can only bear so much of it out of the can). This one's full of healty fats (omega-3's) from the salmon and flax seeds (a double dose).
15 1/2 oz can salmon, drained, deboned and flaked
1/2 c chopped onion
1 tsp ground celery seed
2 T lemon juice (1/2 lemon)
1 tsp dried dill
4 dashes Tabasco
1/4 c oat bran
½ cup flax meal (1/4 cup seeds)
2 ea beaten eggs
Preheat oven to 350F.
Combine flaked salmon or tuna with onion, celery,
lemon juice, and dill in mixing bowl Add remaining
seasonings. Stir in the oat bran. Blend in eggs.
Pour into loaf pan, sprayed with Pam, and bake for 45 minutes.
Cut in half, makes 2 big servings
