Black Bean Chicken Stew (Protein + Carb)
Here's my new favorite P+C meal. It's full of fiber, which is essential to get rid of all the food you're throwing in your body.
1 can Goya black beans (1.75 cups, drained)
2 large slices of onion, chopped
1 medium tomato, chopped
1/4 cup salsa (I prefer smoked salsa for this recipe [Mrs.Renfro's is my fav)
1 small (6 oz) chicken breast, pre-grilled
1 whole wheat tortilla
Throw the chopped tomato and onion in a pan, and stir until they sizzle a bit, then add beans, chopped pre-cooked chicken, and salsa. Bring to a boil, then eat the stew with the tortilla on the side.

Fat: 6 grams
Carbs: 118 grams
Fiber: 32 grams
Protein: 62 grams
