Falafel (P + C)
Turns out that some dry falafel mixes you can get are very healthy, as long as you don't deep-fry the stuff. Look for a mix with whole wheat flour and lots of fiber.
1.5 servings of falafel mix (about 0.65 cups dry)
.5 whole wheat pita
4 oz grilled chicken breast
.5 medium cucumber
1 small tomato
4 tablespoons catsup
Soak the falafel mix in water as directed, and form a large patty from the goop. Fry in a non-stick pan without oil, like a burger.
Slice the chicken in strips, adding curry powder and salt/pepper when grilling or reheating.
Chop the cucumber and tomato in small pieces and mix together.
Use the catsup to dip falafel into (too bad we can't use hummus, because of the fat )
