I make these all the time, it isn't much of a recipe but hey.
- 3 large leaves romaine lettuce or 1 large hollowed out cucumber
- 1/4 medium tomato
- 3-4 large dill pickle slices
- spices (black pepper, red pepper, cilantro)
- 1 can tuna (4.2 oz drained) or a chicken breast
- mustard
Place the leaves of lettuce on a flat surface. Flake in about 1/3 of the can of tuna. Shave a couple thin slices of the tomato on top, and dice up one or two slices of pickle and put that on top of the tomatoes. Add pepper and other spices to taste, and top with mustard. You can then wrap up the leaf and eat the thing like a sandwich.
If using a cucumber, eat it like a skinny open faced sandwich.
Sometimes I add a bit of canola-based caesar dressing, but usually I just eat this with some fish oil caps.
