1/4 cup Onions
1/4 bell pepper
1 can of black beans
2-3 cups low fat shredded cheese
1 cup or 1 small can of corn,
1-2 cups Salsa or Rotel
Tortillas (flour or corn)

Nothing is exact, I put measurements for those who can't make recipes without them. Chop the onions and bell pepper, and saute them in a little olive oil. Add the black beans, corn and salsa and simmer for a few minutes.
Lightly coat a baking dish with oil. Spoon the mixture into tortillas, add cheese, roll up the tortillas and put into a baking dish, seam side down. Lightly spray the wrapped tortillas and bake at 350 for about 15 minutes.
This is best with the cheese dip recipe posted in this forum, poured over the top and served with a salad.

I like to use enchilada sauce on top, it's generally low in sugars; as well as using whole wheat tortillas, and chicken; then i'll bake rather than fry the tortillas, with mozz. cheese on top ^_^
