I realize this is a recipe that will appeal to americans of the south (my neck of the woods) mostly but it is delicious for anybody.
-One block of low fat or non fat cream cheese, 8 oz.
-One can of low fat cream of mushroom campbell's soup, 10 oz.
-One can of Rotel, approximately 14 oz. or salsa, approximately 14 oz.

Put the cheese in a bowl, microwave for 1 minute. Stir until smooth. Add the soup and microwave for 1 minute. Stir until smooth. Add the Rotel or salsa and stir until smooth. If presentation matters, beat the cheese and soup with beaters until lumps disappear.

Trust me on this, it is delicious. You CANNOT taste the mushrooms. I put this on top of my healthy enchiladas which I will post also.

Hmmm, may hafta try that, especially being an "American of the South" myself Reminds me of my homemade mac-and-cheese; however, though I haven't done the macronutrient breakdown on it yet, I don't think I want to. Let's just say I easily sucked a Jersey dry to get all the dairy I put into that stuff. Consistency of peanut butter, but man... never again though [img]smile.gif[/img]

Phaedrus... You live in the south? What state?

You really should try that cheese dip recipe. It is really SOOO good. If I use it on a cheat day if really feels like I am cheating (but I'm not), so I end up not losing too much ground on a cheat day.
