Total recipe: 623 calories Protein: 85g Fat: 4g Carbohydrates: 48g
Per pancake (1/6 of batter): 104 calories Protein: 14g Fat: .66g Carbs: 8g

Sarah, each of my 3 meals consisted of 2 pancakes, 2 slices Applegate Farms Sunday Bacon, strawberries, orange slices, and 8 oz of milk. I think I posted a pic and nutrition stats in my training log.
Here's the pic:
I haven't had a hunger issue since starting the challenge. All the protein and water are filling me up! I think the pancakes were a much more satiable way to eat 12 egg whites in a day, though! I just bought more pumpkin today and plan to make them again soon.

OMG, I am SO copying this meal next week.
Anyone know if the pancakes would freeze well? Or if the mix works in a waffle iron (and freezes?)

I made buckwheat pancakes last weekend and put aside two portions in the fridge for this week. I didn't freeze them but I thought they reheated just fine. I would think they'd reheat well. Most bread products freeze well so I don't think it would be a problem.
As far as the waffles go waffles usually have slightly different portions of ingredients. I would just compare a recipe for both pancakes and waffles and adjust accordingly. From what I remember waffle batter needs to be a little thicker and may have a little more fat.

Repeating the question in case nobody saw it... how much actual pumpkin do you need.
Also.. more pumpkin recipe pointers would be welcome. In METRIC if possible.. imperial is like frigging Chinese

Espi ~ I haven't made my pancakes yet, but I am using 305 grams in my recipe (each serving is 122g). I'm not exactly sure how many servings are in a can because I haven't bought some in awhile. I have it already in my Fitday log based on the 122 gram serving, so I'm guestimating there is at least 2.5 servings in a can. I guess I will know for sure once I go the store.

I've just started to find out how to adapt the pancakes for raw pumpkin. I'll need to cook the pumpkin first of course.
Nutrition Facts and Analysis for Pumpkin, canned, with salt is for canned pumpkin: 100g = 34kcal
Nutrition Facts and Analysis for Pumpkin, raw is for raw pumkin: 100g = 26kcal.
Since calories never disappear, this means that 100g of raw pumpkin will go down to 26/34*100 = 76g pumpkin.
If I understand Wilburaz correctly that can of 425g held 300g of actual pumpkin , doing the math this would be 300/0.76 = 395 of raw pumpkin.. something like 400g then. Amirite?

You can find great easy conversion calculators if you Google/search for them. I have a little "widget" on my Macintosh desktop for conversions... We're just as challenged by ounces to grams... I know how big a portion 12 oz of sweetpotato is, but hmm how big is 200 gm raw sweet potato?

Oh, and I wish this were called One Giant Meal instead of One Big Meal. Everytime I see O BM in someone's log my mind goes to gross places. Wish it were O GM!

This is totally true and I was thinking the same thing. Then again, when anyone posts about eating disorders as ED, my mind immediately goes to the other ED that's been pounded into my brain by TV commercials  .

Had to share todays meal, my best this week! (and it didn't take long to prepare) Please note I also had a cheese craving I had to fulfill...
akimbo's Skillet Chicken and Black Beans
12 oz (340g) Boneless Skinless Chicken Breasts (raw), cut-up.
1 tablespoon Olive Oil
1 jar salsa with heat of choice (mine was 12oz/355mL)
1 can black beans (drained this came to 10.9 oz (309g))
1/2 can corn (drained this came to 4.4oz/125g)
5 6" corn tortillas
1 oz (32g) shredded sharp cheddar (I use Tillamook, you want something with strong flavor to compensate for the mozzarella)
3 oz (85g) fat-free shredded mozzarella
2 tablespoons fat-free sour cream
Brown chicken in olive oil, then drain. Combine in skillet with salsa, black beans (drained) and corn(drained). Heat to bubbling if desired. Serve with tortillas and topped with cheese and sour cream.
Calories 1452
Carbs 160g
Fat 30g
Fibre 27g
Protein 143g
I didn't even bother heating everything up after the chicken was done, just mixed it and put in containers with torn up tortillas and cheese, it would all melt when I reheated today. I kept a tiny separate container for the sour cream.
I bet this would be good with peppers too, but not for picky me.
If you wanted a casserole, you could just toss it in the oven in a dish and add cheese at end. Which is kinda how my mom did it, with raw chicken (but I think all the water/juice that comes out of the chicken dilutes the salsa flavor).
I just realized this has a lot of sodium (my counter has it at 3898mg!). That can be cut by using unsalted beans and a different cheeses (why does the fat-free mozzarella have to have 400mg sodium per oz??)

That sounds really good akimbo.... but I think I'll wait a week or two. I cooked chicken with salsa in the crockpot on Monday and have been eating it for lunch all week.... so I'm a little "salsa"d out LOL!
