Hi everyone! I posted my measurements on Leigh's site and sent my updated pics via e-mail. It appears that I lost 5 lbs, but I am reasonably certain it was water retention. My measurements are down, but I really don't see the change in the pictures. Although, yesterday my husband thought he would be funny and pulled my shorts down because they were droopy. Ha Ha. I've been following OPT and I have to admit I love the recovery method. I was sort of hit and miss with my foam rolling before, but now I HAVE to do it and I think my body is responding well.
So, yesterday I made the pumpkin pancakes...OMG! Yummy! Saturdays were always hard for me because I would want to cheat. Well, those pancakes made me feel like I was cheating. There's nothing like having pancakes for dinner!

Etana, I wish I had better cookware. I've got the cheapie stuff you buy when you're young and first getting started. I'm going to have to bit the bullet and buy some nice cookware at some point.

Debby, I think you look great, too. You say that you see lots more body fat in the last few months, but you're still looking pretty lean to me. Are you looking to do body recomp here?
Rachel, regardless of whether it was water or not, it was 5 lbs and it's gone. Good for you!

Oh, I made pumpkin pancakes today and used the same spices I'd use for pumpkin pie: 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp cloves. I omitted the maple syrup because I didn't feel like getting a measuring spoon dirty. I cannot tell you how good pumpkin pie pancakes are! Ha, now it's Paula's Pumpkin Pie Protein Pancakes - talk about an alliteration.

I made turkey meatballs with spaghetti squash the other day and I stayed full all day. I had to add some raw almonds on the side because fat was too low, but I thought the spaghetti and meatballs turned out pretty good.
I took 1 pound of Jennie-O extra lean turkey and mixed it with one egg white and some onion powder and garlic powder. I made up 24 small meatballs and baked them at 350 degrees for 20 minutes (or until juices run clear).
I then sauteed 80 grams of onion with 4 garlic cloves and 180 grams of green pepper. When that was softened I addes 325 grams of petite diced tomatoes. I let that simmer for about an hour and then blended it with my handheld blender into a chunky sauce.
I also baked a spaghetti squash and shredded it. I used 300 grams of that for my "pasta". I also halfed a baked sweet potato (280 grams total raw, so 140 grams raw for half) and smashed that up.
My meals were spaghetti squash, topped with smashed sweet potato, turkey meatballs, and then sauce. Oh, and don't forget the almonds on the side.

Hey, enjoy the five pounds gone! Pictures don't always tell the story... I think I look fatter in mine, sigh. Yet my underwear is getting baggy.
I think today I will get out my foam rolling book and see if I can figure out how. I saw some stuff on the web, but it looked like I would have to be supporting my body with my arms to do the foam rolling, and I'm not sure that will play out well with my bad shoulder. Actually, my right shoulder is irritated now as well. Probably too much computer time lately what with blogging and the challenge.
Those pumpkin pancakes are catching... I don't know that pancakes would keep me satisfied all day, but I think I am going to try them this morning and see what I think.
Turkey meatballs sounds good! I did bison meatballs last week with spaghetti squash... big hit with hubby! Can't find another spaghetti squash though. They seem to be scarce up here. I like the idea of baking the meatballs, I might try that. I bought a yam at the store yesterday, haven't had a yam in a while.

Where exactly is this recipe? I saw a Pumpkin souflee; is that it?
Here's the recipe Etana... it was posted back a few pages:
Paula's Protein Pancakes
15oz can pumpkin (425g)
12 egg whites (1 1/2 cups)
3 scoops of vanilla protein powder (can use other flavors)
1 tsp cinnamon
Nutmeg to taste (optional)
1 tsp maple syrup (optional)
MIx pumpkin, egg whites, maple syrup, and spices together until fairly smooth. Add PP powder and mix until well combined.
Heat griddle until sizzling hot and spray with a bit of pam. (I used a non-stick griddle and turned my heat slightly lower than with wheat pancakes.) Pour 2/3 cup batter onto griddle and cook like a regular pancake. Mine were 8 inch in diameter. If you want a smaller pancake, use 1/2 cup to ladle batter onto grill. (I used 1/2 cup slightly rounded and it made 6 pancakes). Flip when top begins to look set and almost dry.
Total recipe: 623 calories Protein: 85g Fat: 4g Carbohydrates: 48g
Per pancake (1/6 of batter): 104 calories Protein: 14g Fat: .66g Carbs: 8g

Egg White Tip: If you have to separate lots of eggs for the whites, just crack all of them into the bowl and fish the yolks out with your hand. It takes a lot less time than pouring them from one half of the eggshell to the next!

Said I'd be back with a recipe. I'm going to post as originally in the magazine/book that way you can adjust for your own needs. This is in the November Taste of Home magazine.
Black Bean and Pumpkin Chili
1 medium onion chopped
1 medium sweet yellow pepper, chopped
3 cloves of garlic
2 TBSP olive oil (I used 1)
3 cups of chicken broth
2 15 ounce cans of black beans, rinsed and drained
2 1/2 cups cubed cooked turkey
1 can 15 ounces solid pack pumpkin
1 can 14 1/2 ounce diced tomatoes, undrained
2 tsp parsley flakes
2 tsp chili powder
1 1/2 tsp dried oregano
1 1/2 tsp ground cumin
1/2 tsp salt.
Saute the onion, pepper, and garlic until tender. Add all the other ingredients to slow cooker. Cook on low for 4-5 hours. Yield 10 cups.
1 cup= 192 calories, 5 grams of fat, 1 g sat fat, 28 mg chol, 658 mg sodium, 21 g carbohydrate, 7 g fiber, 16 g protein. (This is the nutrition data posted for the recipe in the magazine)
This was really good you don't taste the pumpkin but I think it makes a nice thickener. I just cooked mine on the stove. My recipe yielded about 15 cups with my weighed ingredients but the calcs per cup were similiar except for the fat was only 2.5 grams and about 170 calories. One cup weighed 245 grams.
Cheese Biscuits from Bob's Red Mill Baking Book
2 1/2 c unbleached white flour
1 c whole wheat flour
2 TBSP baking powder
1 tsp baking soda
1 TBSP sugar
1/2 tsp salt
1 1/4 c grated cheddar cheese
2/3 c grated Romano cheese (I didn't use this)
12 TBSP unsalted butter, chilled
1 1/4 cups buttermilk, chilled (I used 2% milk and 1 TBSP lemon juice)
Preheat the oven to 450. Sift the dry ingredients together, stir in the cheese. Cut in the butter. Add buttermilk and mix. Knead on floured surface until smooth, 5 or 6 times. Cut into 3 inch rounds. Place on a baking sheet lined with parchment paper and bake for about 15 minutes.
I got 19 biscuits. (Recipe says 16)
The following nutrition info is from my software/weighed ingredients as the book doesn't give nutrition data.
These are definately not low fat items so I hesitated to try them but the chili is very low fat so decided to give it a go. They paired together very well. Also it is definately 2 TBSP of baking powder. When I first saw that I thought it was a typo but I've never seen a biscuit recipe that was part whole wheat flour either so made it as listed. The biscuits came out light and fluffy.
Will post measurements and pics later. (Need to buy another measuring tape as the measuring tape gremlins have mine.)
Oh yum.... something else to try Diana! I'm just about finished up with the Chicken, Sausage & bean soup from Leigh's blog, and about to put the beef and broccoli quesadillas in the oven! I've got the stuff for Shari's eggplant lasagna, the chicken stir fry, and Paula's protein pancakes for this week, too. I also found an interesting shrimp w/ peanut sauce recipe that I'm going to work on adapting, too... I'll keep you posted on that one! I feel like I need to add some recipes, since I'm stealing everyone else's!!

Thanks for that recipe Diana! I just bought some turkey cutlets yesterday and was wondering what I was going to do with them...you rescued me.
I just pulled my beef and broccoli quesadillas out of the oven! I am currently having Leigh's soup for my Big Meal today. I made mine with sweet pepper and basil chicken sausage from Trader Joe's and I subsitituted the chickpeas for canellini beans. I just can't eat chickpeas unless they are in the form of hummus.
I agree. I don't bake all that much but this book has some interesting looking recipes with some grains I've never tried before like amaranth. At some point I really need to experiment with some of the other flours and grains in the book. I should probably pick one new grain/recipe each month and give it a try.

LOL.... we're eating the same stuff the next couple of days I guess! I cooked both the soup and the quesadillas today too!
Yep! I am having the lasagna tomorrow and the quesadillas Tuesday. I won't have time to cook tomorrow night, so I thought I would get it done today. My husband asked if the lasagna was for him, I politely told him NO! I also mentioned it had eggplant and he wrinkled his nose at me. He definitley won't be touching that!
I'm so proud of all of you for working ahead to get your meals together! Have you noticed that you've had more time through the day since you haven't been having to worry about food (or at least what to eat)? I know you still have to do food for your family but at least you don't have to think about food for yourself, ya know?

Sinead - I have noticed that I'm not so stressed out while making dinner for my family. I used to prepare a separate meal for myselfwhile I was cooking their dinner, and in the meantime I was HUNGRY! Now, my dinner is already done and if I'm hungry right when I get home from work I can eat...no worries! This may be a lifestyle I adopt permanently.

It's always so interesting to see how different people respond to different strategies. Cooking separate food for my self and then doing it all over again for my family would drive me stark raving bonkers. But I'm really glad that this is helping you Rachel. Good job.

The quesadillas are sooooo good. I think my favorite meal so far. I made them today. I used tomatoes also and I feel like that added a lot. Oh yeah I also used ground turkey. YUM!!!! I cannot wait to make them again.
