The idea of making everything at once either as separate meals or as 1 big meal is terrific. Friend of mine has done the same for many years and achieved überleanness that way.
I'm not joining since I prefer to make everything just in time. I do preplan all of my meals the night before and actually know my calorie targets for several days ahead. The exact ingredients are not always certain nor macros as I e.g. won't be chopping up a chicken breast. The meals do tend to be a bit.. boring. Not being the greatest cook and interested in achieving a leaner look = boring meals. They taste good.. but you know what I mean?
Since embarking a more intuitive approach I've been trying to widen my gastronomic perspectives and.. esp in this time of year all of you gal's (and guy's) ideas are making me droooool!
So please, if you have some wonderful recipe to share, put them in this thread and we'll be lapping them up. One more request.. please please please use grams or mililiters. As a Euro I don't do imperial,only metric.
I'm Jim, one of Leigh's six pack team. I just gotta say that you all are awesome. It's sooooo cool to read all the great recipes and words of encouragement.
So far, so good. I have been keeping to the one-big-meal concept. So far, it's been chicken stir fry, meatloaf, chicken with pasta. It really keeps me focused on what I can and can't eat throughout the day. I've always been a snacker so this has been a great way for me to control my calories.
I guarantee I will be making the Eggplant lasagna and sweet potato casserole this week.
My day 2 stir-fry only got 2/3 eaten. The sauce and garlic were just too much for eating all day. I could taste it all day, even with gum and lots of fluids! Just thought I might warn everyone to learn from my stupidity
Finished off the day with a handful of peanuts and a tiny chocolate square (I wasn't at my own home to get real food). Which probably left me a bit under calories, but oh well.
I did chicken marsala type thing today. Much more edible! Down 3 pounds since Monday morning.
8 oz. eggplant
1 lbs lean ground turkey ( i used 99%fat free and i used 20 oz raw)
½ cup chopped green pepper ( I used one whole green no red)
1 medium red bell pepper
2 tsp garlic (or 4 cloves)
1 tsp fresh basil
1 tsp fresh oregano
1 cup fat free ricotta cheese
2 egg whites
2 tsp parsley flakes
1 cup canned diced tomatoes
5 oz. fat free mozzarella ( i used 2%fat moz.)
Preaheat oven to 350 degrees. Peel and thinly slice eggplant. Arrange in one layer on baking sheet and bake until tender. (about 7 min)
Sautee garlic and peppers until soft. Add turkey and brown. Season with salt and pepper to taste, add tomatoes and a bit of water, and simmer about 10-15 minutes. Add basil and oregano and stir through.
In separate bowl, mix ricotta, egg whites, and parsley.
Assemble dish by spreading small layer of meat in bottom of baking dish. Add the layer of eggplant followed by more meat, ricotta mixture, and finally a layer of mozzarella. Keep layering until dish is full. (Will depend on size of dish. I used a large baking dish and only got 1 layer of everything. ) Cover and bake at 350 for about 45 minutes. Then remove cover and bake until cheese is slightly golden.
I'm definitely going to try that recipe Shari... thanks for sharing it with us! Best thing is, I know everyone else in my house will leave it alone, because I'm the only one who eats eggplant!

I decided after making one single OBM that I just can't hack the cooking physically. I was totally up front about it that I wouldn't be doing that, but would batch cook when I could and try to plan my meals ahead. Leigh hasn't kicked me out yet... just sayin'.
Thanks for posting that recipe Shari. I have a recipe already, but I just couldn't tweak it enough and yours looks perfect. So far so good for me too. Tomorrow is beef stir fry. I bought my Lean Dessert Protein today in Cinammon Roll flavor for my pumpkin protein pancakes (thanks Paula) for Saturday, I am really looking foward to that one (since I guess DQ Pumpkin Blizzards are out of the question).

Yeah, I'm dense... I'm beginning to think it's the Fish Oil pills. I've never taken more than one a day before. I'm trying to spread them out but I still have a mild yucky taste in my mouth today, like I forget to brush my teeth.
Akimbo ~ I read somewhere that if you freeze the fish oil pills it helps with the "fish burp". I haven't tried it, but maybe someone else will chime in too.

Anyway I thought I'd post a recipe tonight. I made a boatload of macaroni and cheese. I'm consolidating my food with the family's food so keep that in mind. If you want this as part of a big meal adjust portions accordingly.
475 g dry macaroni
82 g onion, diced
160 g cheddar cheese, grated
1 1/2 c milk (I used 2%)
2 cups of chicken broth
15 g butter
75 g of cornstarch
60 grams of breadcrumbs
Reserve some of the grated cheese and mix with bread crumbs. Cook the macaroni per directions on the package. Cook the onion in the butter. I make all my white sauces with at least half broth instead of 100% cream or milk and thicken with cornstarch. Add the broth and milk to the pan. Mix the cornstarch with a little water and add to pan. Cook until thick and bubbly. Remove from heat and add cheese and stir until melted. Combine cheese sauce and macaroni in a casserole dish, top with reserved bread crumbs and cheese topping. I bake at 350 till bubbly.
This made a big 4 quart casserole dish and the entire batch believe it or not weighed 2600 grams cooked. That's never happened to me before.

Leigh says that the ones with the enteric coating are much better for the "fish burp" thing, too.
Oh poo. I think I saw those at Costco but bought the cheaper bottle (which I haven't opened yet). Finishing of a bottle from Trader Joes, we'll see what happens with the others!
I almost forgot to eat the last 1/3 of my meal today! I don't get hungry at night like I do during the afternoon. I hope an hour before bed isn't too late to eat

Hmm! Worth trying. I even have a little freezer box in my little work fridge.
Sounds like everyone is hanging in there so far! Did I miss the pumpkin protein pancake recipe? That sounds fantastic! Is that posted on here somewhere?

also today i made the big easy breakfast casserole but i adjusted it and mine came out to like 750 calories and hers was like 500 something
15oz can pumpkin (425g)
12 egg whites (1 1/2 cups)
3 scoops of vanilla protein powder (can use other flavors)
1 tsp cinnamon
Nutmeg to taste (optional)
1 tsp maple syrup (optional)
MIx pumpkin, egg whites, maple syrup, and spices together until fairly smooth. Add PP powder and mix until well combined.
Heat griddle until sizzling hot and spray with a bit of pam. (I used a non-stick griddle and turned my heat slightly lower than with wheat pancakes.) Pour 2/3 cup batter onto griddle and cook like a regular pancake. Mine were 8 inch in diameter. If you want a smaller pancake, use 1/2 cup to ladle batter onto grill. (I used 1/2 cup slightly rounded and it made 6 pancakes). Flip when top begins to look set and almost dry.
Total recipe: 623 calories Protein: 85g Fat: 4g Carbohydrates: 48g
Per pancake (1/6 of batter): 104 calories Protein: 14g Fat: .66g Carbs: 8g

Maggie's correct. The enteric coated is the way to go!
