Chicken Breasts are a big part of my diet
(boneless skinless of course)
But man, are they ever getting bland!
Even good ol' barbeque sauce is starting to lose it's zest that it gives the bird.

Does anyone have any ways to spice it up a little? Any recipes to add some flavor to these flavorless birds?

you put that on before you cook it, salsa first, then cheese?

No. When you get ready to eat it. Just throw some salsa and shredded cheese on it and warm up as desired.

Anubis,

I buy the boneless, skinless breast, then freeze each one separately. The night before, I take it out of the freezer, and marinate it overnight. I take it to work the next day and nuke it in the microwave. Trial and error as to how long to nuke it. some of my personal favorite receipts are:

1) lite soy sauce, sesame seeds. Prior to nuking, add some chopped pineapple or mandrain oranges. After nuking add some crushed red pepper to taste.

2) worchester sauce, sesame seeds, crushed red pepper to taste

3) orange juice, crushed pineapple

4) cooking sherry, rosemary and sage to taste

5) cooking sherry, honey, crushed red pepper to taste.

I do similar things to salmon and tune steaks.

hope this gives you some ideas!

Indeed it does. I buy the Boneless/Skinless breasts already frozen. So in that case, the night before I eat it just take it out and put it in one of the marinades overnight and it should be ready to cook for dinner the following day?

lol, I hear ya JMR.. perhaps we could both use some extra recipes for Chicken.

Other than BBQ I have used Garlic Pepper which has a really good taste.

I wonder if there is any healthy breading that could be added to the chicken?

I put spag sauce and skim milk mozz cheese, or dijon mustard and dill. I have also done the olive oil and sesame seeds.

I like your marinade ideas, Rem. I'll have to try them sometime.

My favorite marinade is lemon juice, olive oil, garlic and rosemary (with salt and pepper). I usually use about 1 part lemon juice to 2 parts olive oil.

I've been experimenting lately with dry seasoning: Chili powder or Old Bay work really well, or Mrs Dash Lemon Pepper. A little goes a long way.

Healthy breading would be an interesting challenge, Anubis. Perhaps whole wheat bread crumbs? I think you could skip the egg wash and maybe use buttermilk instead, or maybe use Egg Beaters. Then roll the chicken in seasoned ww bread crumbs and bake it. You've got me thinking... I might have to experiment this weekend.

I almost always eat them stir-fried with vegetables -- the grocery stores sell frozen bags of pre-cut stir-fry veggies that are very easy to cook and give you a good variety. Wal-Mart sells Asparagus stir fry mix and a Sugar Snap Pea Stri Fry mix that are great. For seasonings, in some combination -- salt, pepper, garlic, chili powder, ginger, lime or lemon.

try a little dijon mustard with a tiny bit of honey as a marinade if you like honey mustard

how about a jar of alfredo sauce and some parmesan cheese before baking

Next time you're in the marinade aisle at your grocery look for Stubbs brand marinade. We like that too.

My favorite...a spicy jerk chicken on the grill (dizzy pig's jamaican firewalk will set your lips aflame) with grilled pineapple rings and black beans.

Here's a good one.

Take a handful of pecans (almonds or peanuts would work to) chop them in a blender (or smash by hand) to make small crumbs. Be careful not to mix too long or you'll get pecan butter! Coat the chicken with a little olive oil and roll in the nuts. Bake at 350 for 15-20 minutes. Voila, very tasty.

One other: rem1956 mentioned orange juice and pineapple -- if you throw a little apple cider vinegar in there you'll have a nice sweet and sour chicken.

I like to marinate mine in Italian Dressing. Leave them overnight and then throw them on the grill. I make a bunch of it so I can nuke it later for lunches.

This is a stretch, but I've been having the butcher grind up my chicken breasts to make it similar to ground beef (sometimes they already have it prepared this way), and I've been making chicken meatballs, chicken burgers, chicken tacos, etc. Anything you would make w/ ground beef or turkey. I put some Worchesire sauce and a bit of chile powder in there for some damn good burgers. Just another thought.

Grilled chicken breast is really good in a caesar salad w/ greens, feta, and dressig. Its pretty healthy too.

Putting it in w/ some sauce and pasta is good.

Shallots, a little olive oil, and pepper is also really good w/ chicken
