I am in college and don't even have my own kitchen. So i'm basically eating Matzah with natural peanut butter, or whatever kosher cream cheese or *gasp* butter I can find. Plus salad and fruits. Is there any super easy to get stuff I can eat? I am lactose intolerant so I can't eat straight up dairy things like cottage cheese, etc. :/ Thanks.

You can basiclly eat the same healthy food that you usually eat. The only thing that changes is where you get your carbs from. Eat whole wheat matzah(yes, they do make it), fruit, veggies, and yam for your carbs over the holiday. Otherwise, all other foods are fair game as long as they dont have corn sryup, but you should be avoid those foods anyways.

Thanks for the info. How much peanut butter should I limit myself to daily? I know its better than eating creamcheese or butter on my matzah, but still, there IS an unhealthy amount of peanut butter.

Depends on how much fat you are aleady eating in your diet. Also, make sure you are eating natural pb. The only ingredinets should be peanuts and maybe salt. You should be safe eating 2-4tbsps a day though.

Yes, I am eating all natural. My diet is pretty low in fat - tons of matzah and fruit will do that to you.
