I love eating fish as a source of protein. I typically bake/broil it to keep it healthy. Is pan frying in olive okay too (in terms of health, not taste)? By pan frying in olive oil, wouldn't I be adding good fats? Just curious, as I don't want to turn a good source of protein into something that's not ideal.
I think a little spritz won't do much to make the fish bad for you. I'll typically put a little bit in a pan, let it heat up to a pretty hot temp, and then sear a nice piece of ahi tuna. It won't get very oily at all, and the searing locks in really good flavor, so you don't need much of any seasoning. I think with everything else, moderation is key. A little olive oil or Pam isn't going to set you back on your goals....

I GRILL fish every weekend for my lunches during the week. I think grilling is a great way to cook fish... plus, it keeps me in good graces with the wife who doesn't like or want to smell fish!
I think he's worried about himself getting cooked, with the name Fish

What types of fish are safe to eat? This may be a dumb question, but I just need to eat fish...I have to...I remember the days of grilled tilapia filets covered in Chef Paul Prudohmmes Blackened Redfish Magic seasoning, GAWD! Here are some seasonings I love, http://shop.chefpaul.com/.

I use Prudohmmes seasoning all the time on my salmon... mmmmmmm!

I just had an idea for a new thread. I'll titled it "The Art of Hijacking." I seem to be better at it than I was aware of!
I wouldn't worry too much about pan searing, as long as it's not your only method of cooking fish, and as long as you're not pouring enough oil in the pan to deep fry the fish.
