i was wondering..i was thinking about making up enough egg mix for 3-5 days so that all i have to do is just poor it into a pan. i usually eat 1 whole egg and 4 egg whites. would it be ok to put all of the egg batter into a container and keep it in the fridge and if so..would it be able to keep for 5 days?

Not sure about the shelf life, but you could get "Egg Beaters" It's a carton of already mixed up eggs. It may have some extra stuff as well so you should check out the ingredients. Never used it before, but they may solve your problem.

I'm pretty sure that the only thing "egg-beaters" add in is some yellow dye for a nice eggy color. But IMHO they still don't taste as good as a regular home scrambled egg.
But really dude...We're talkin' about cracking eggs here. Why worry about it. Just crack em' every morning and there ya' go.
But I don't know about an eggs "shelf life" either...sorry.

I'm not exactly sure how long regular eggs would keep out of their shell. But I collect my unused yolks for my neighbors, and the yolks keep for a good two weeks in a sealed container in the fridge.

For a change I've recently been mixing in 1/4c cottage cheese with my egg before cooking. Same protein as 1 white and makes the egg really fluffy and cheesy.
Not sure how it would work with lots of whites, but might be worth a try.
Plus saves a lonely yolk...especially if you get the pricey vegetarian-fed omega-3 rich ones...
I vote for cracking them in the a.m. too [img]smile.gif[/img] Or maybe the night before?

In addition to the Omega-3 eggs, you should be buying regular eggs and throwing their yolks away. The only benefit to the Omega-3 eggs is in the yolks.
Buy both types and save the Omega-3s for eating whole.

Or better yet, but the omega-3 eggses for their yolk and a white and then use cartons of eggwhites for the rest! Although the grocery store was totally OUT of omega-3 eggses yesterday if you can believe that!
I think I may try the cottage cheese thing though......
