Question

I was remembering how Walter Willett. M.D. in his book "Eat, Drink, and Be Healthy" said that "the body breaks down glucose in a potato more rapidly than pure sugar"

If this is true, and the point of PWO nutition is quick replenishment of glycogen stores, wouldn't it make sense to try a potato PWO instead of gatorade or maltodextrin or dextrose??

Downside is perhaps convenience (and refreshment?)...would have to prepare in advance(mashed or microwaved + FF cottage cheese? --can't imagine a flavored protein powder would be yummy with a potato)

Just trying to appeal to eating natural foods...I've tried gatorade + protein powder PWO but still have a mental block.

It depends on what he means by pure sugar. Table sugar is half fructose and has a lower GI than dextrose or maltodextrin. Pure glucose (dextrose) has a GI ranging from 100-114 (depends on the amount I think). Maltodextrin has a GI of 140 apparently, it's not listed at glycemicindex.com so I can't confirm. A potato has a GI ranging from 50-111 depending on what kind. Plus, dextrose and/or maltodextrin are way cheaper than potatos.
