I am trying to find a good protein source that is good to include in a breakfast meal. I could use a protein powder, but i would really like to stick to real food for this meal. I know eggs are a high protein food, but the cholestorel in one egg is HUGE! I have tried just frying up the whites, but the taste is really not there, and its a lot easier to just fry up the whole egg. Anyone know anything about good/bad cholesterol and how eggs fit in to the picture? I also noticed the 5g of fat per egg which has me a little worried. Is this a good fat?

I would suggest buying egg whites that are already separated and sold in a carton. You'll find them (one brand is called Simply Egg Whites, but there are more) at your grocery store right by the regular eggs.
As for the taste, I would highly recommend over coming your dependence on rich foods. Contrary to popular belief, your taste buds will adapt over time to blander tasting foods like egg whites and tofu. If you keep blasting them with salty, over-powering, strong tasting foods this will never happen.

I usually eat an omelet with one whole egg and 4-5 whites. One to two yolks a day will not harm you...here's a review of health effects of egg cholesterol:

Here's a particularly relevant quote:

There was no evidence that changes in dietary cholesterol intakes altered the postprandial plasma lipoprotein profile (lipoproteins thought to be involved in the development of atherosclerosis) and thus did not alter the atherogenic potential of the plasma lipoproteins. The data indicate that in the majority of healthy young men addition of two eggs per day to a low-fat diet has little effect on plasma cholesterol levels.

I eat it with hot sauce every once in a while to punch it up. You can also mix in turkey ham for a little variety...

Well, I personally eat the whole thing. I am also on a cutting diet, and I eat eggs every morning. I haven't noticed a slow down in my progress either.

Why would you expect to see a slowing of progress due to the eating of whole eggs?

I usually eat 2 eggs cooked w/olive oil, 1/2 cup cottage cheese, 1 wheat bread, 8oz v8 spicy...
from my understanding the yolk is what has the protein source so why get rid of it...

its all a conspiracy.
dont eat eggs cause of the cholesterol
dont drink milk cause of the lactose
dont eat fruit cause of the fructose
so what you need is a potent protein shake that has everything that you need. and what do you know, we just happen to sell one.
LOL!!!

Sounds like a good diet to me.
As far as protein in eggs yolk and egg whites are concerned, egg whites have more protein than yolks do. White=3.51g (vs) Yolk=2.78g So to answer your question, "why get rid of it...", the answer would be because the yolks contain ALL the cholesterol.
