THIS STUFF is really good!!! This is where I buy my beef and have for a couple of years.

This is not a commercial... I don't have any financial interests here. Just sharing a good source, IMHO, with you folks.

Sweet, thanks for the heads-up. Grass-fed longhorn beef, now that's some healthy stuff! Is Sabinal close to us?

Nice. We buy grass fed, organic beef as well from a local cooperative that supports small family farming. If you would have told me I'd be doing something like that 10 years ago, I would've said you were crazy. But kids and my own sense of mortality have forced me to take a good hard look at what I consume (as, I'm sure, a lot here have), and I didn't like what I found.

Hey John (or anyone else), here's a question: I was told that grass fed organic beef should be leaner than normal grain fed, bovine growth hormone beef. However, I was also told that the fat in grass fed beef, while still fatty, has a better ratio of Omega 3s to 6s (you are no doubt aware of the heavy skewing in our modern western diets towards 6s and all of the suspected subsequent issues). So even the fat in grass fed cows should be healthier. Does anyone have any info on this? Have you heard of this? Anywhere you could point me to read more?

Its got more omega 3 as it is present in grass but when cows are switched to grain it starts to decline so grain reared cows have low levels left at slaughter. It also has more CLA and vitamin E. Because corn and some other grains act to increase the acidity in cows stomachs this causes a number of health problems in them, making grass reared meat a better choice and interestingly helps in making bacteria more acid resistant which can have jump over effects into the human population eg ecoli. There's loads on the net about it, but I havent found any good papers which substantiate these with large controlled studies.

It's out by Lost Maples State Park... but they freeze the stuff to subzero and it ships just fine. They are really nice people and I've gotten them to make custom packages for me. I don't need the roast for just the two of us but the steaks (including chopped) are GREAT! I think the flavor is much better.

It's kind of funny but, because it's so lean, you have to add a little oil to cook the chopped steaks in a pan. That's not usually a problem with beef from the grocery store!

The person who started this website coauthored a book on the Mediterranean diet (don't have it in front of me) but, as a spin off of that, she got interested in grass fed beef. She then put out a book (also at home) but I don't know how well it is supported by research.

Nevertheless, something else to check out!

Got that right, and it's pretty simple - you are what you eat. When cows are fed corn (spiked with antibiotics because they can't normally eat it and survive), their fat becomes infused with omega 6's, because corn oil has one of the worst fatty-acid profiles in the history of grains (omega-6 to omega-3 ratio of 83 to 1 )

Wild grass and leafy greens have great fatty-acid profiles, on the order of an omega-6 to omega-3 ratio of 0.2 to 1, or better.

So when they're allowed to roam and graze naturally, not only are they leaner from getting more exercise, but they are eating omega-3's.

VERY cool. Thanks guys. So I wonder if eating this type of beef would not lead to as much CHD because of the better fat profile. (I think high levels of Omega 6 have been linked to the inflammation that is a factor in CHD). Hmmm.
