Default I need to eat more veggies, but how?

I am not specifically looking for recipes, but for tips on how to incorporate more vegetables. Well, maybe that would be recipes. Anything would help. I already eat salads but I need more. Do I have to resort to a veggie omelette every morning? I really thought the food would be much easier than it is. I'm doing pretty well with proteins and fats. Suggestions?

you mean besides some grilled/steamed/seared/etc veggies on the side?
stirfrys, sauces, veggies in your stews/chilies, garnishes/toppings…
admittedly I don't get how it's hard to not get enough veggies. I'll take a pile of steamed broccoli or snappy greenbeans any day.

Just eat more of them at every meal that's fit for them. I've done them for breakfast for a while but that just feels wrong.. unless breakfast is really a brunch.
For some people veggies are abrasive to their guts & this is where soups & stews are your friend. You might lose some of the nutritional value (though the reverse is true for lycopene from tomatoes = ketchup being the best), but eating twice as many veggies sure beats eating barely any veggies at all !

I'm a huge fan of roasted veggies right now.

Quick prep time, longer cooking time.

Chop up a bunch of mixed veggies: Zuccini, cauliflower, peppers, sweet spuds, etc. Toss in a little olive oil with spices, dump in a pan and cook for 40 mins or so at 350ish.

But really, if you want more, prepare more, eat more.

What sort of things are you currently eating you are having trouble getting veggies with?

If it's about not being bothered to prepare them from scratch, I'll say: frozen veggies really taste good in soups/stews & are cheaper to boot.
For salads, I'm quite fond of pickled anything (gherkins, onions, pumpkins, bell pepper) but that's more for garnish than actually adding a lot of extra veggies on their own.

I don't like veggies for breakfast, so I have my omelets plain and eat more at lunch and dinner. You can add raw or cooked (and chilled) veggies to your salads, for one thing.

I often cook a bunch on sunday night and then just eat them as a side dish with whatever I'm eating during the week. Everything gets a side of veggies.

Thank you all. After reading all the responses I am faced with the fact that I am being lazy and resistant. I have been unwilling to do what I know is best - eat the veggies! I'll stop whining now.

Another thing to remember is that most restaurants will sub veggies for fries. Grilled chicken sandwich and broccolli is one of my standard eat out lunches.

For me, it's a change in the way I think about meals. The way I was raised, we always thought of meals as being based on a main course like meat or pasta with veggies as a side dish. But now I try to think of veggies as the main part of a meal, then add other stuff to it, like some good lean protein, beans, and whole grains.

I like to sautee frozen veggies in olive oil with some good seasoning. It's pretty quick and easy and tasty, and you get some healthy fat from the olive oil. My favorite is fresh spinach quickly sauteed in olive oil, garlic, salt, and pepper, then covered and steamed until wilted. Super tasty and super healthy. The problem is that my wife doesn't like it.

It does take some shopping and meal planning to make it work, especially if you want to use fresh veggies. But keeping frozen ones on hand makes sure that you can always sautee or microwave some veggies to eat with your meal. It's can be a little tougher at work, but you can bring in some veggies and a salad or maybe the cafeteria has a salad bar or has veggies in the hot food line.

I strive to eat at least 9 servings of vegetables and fruit (combined) a day.

Unlike Roland, I enjoy veges in my breakfast omelet. I add about 1/2 cup of Bird's Eye frozen "Pepper Stir Fry" (green, yellow & red bell peppers plus onion) to my omelet every morning and often also throw in a handful of spinach. Every once in a while, I'll also throw in some broccoli.

I snack on raw broccoli, carrots, green beans, and cauliflower a couple of times a day and have at least two servings of veges with lunch and dinner. If I fall considerably short on my vege intake for the day, I'll choke down some Greens+ in the evening.
