Understand that unless you are purchasing straight off the farmer, the milk would have been standardised by seperating off the cream, then adding it back in at a specific level, or not.

Yep, standardized and homogenized for fat content. AFAIK adding water back in is forbidden by law.
Protein content is a minor concern if I remember correctly but it does influence the total price farmers get for their milk.

Cycomiko, since you're in the dairy business, can you explain to me how it is possible that farmers sell their milk for lower prices than the cost price? Seems like the former cooperations which turned into commercial businesses are strangling farmers.. or is this different for NZ than in W Europe?
