I just went through wikipedia's list of cheeses and thought hm, wonder what people eat on a regular basis, there is so much varieties to choose from. So what are you favorites that you have made a lasting part of your diet?
Here are mine:
paneer
cottage cheese
feta
ricotta
kashkaval (you can find it in some specialty stores in the US, but not worth the trouble for most US palettes)
mozarella (esp fresh buffalo)
parmigiano reggiano
manchego
sharp cheddar
bavaria blue
halumi
gruyere
labneh (yogurt cheese)
I am very proud of making great paneer and yogurt cheese, and I would live on those alone, if I could So fess up
cottage
feta
extra superduper sharp cheddar
provolone
parm
mozzerella
Also, while it's less "cheese" and more "super processed cheese food" I do like velveta for grilled cheese (mmmmmeeellltyyyy). Hey, a girl's gotta have a few vices…
I've had some of all you have listed in the last year except paneer, kashkaval and labneh. But I've also had chevre (goat cheese) in that time. On blue, not bavaria blue, but some Maytag blue. I've also had brie in the last year, but not on a regular basis.
In the regular rotation I have:
Cheddar (usually sharp)
Monterey Jack
Parmesan
Blue (of some sort)
Feta
Provolone
Swiss or gruyere
Mozarella
havarti or a similar Swedish cheese made with caraway seeds (don't know if it has a cheese name)
gouda
cottage cheese, ricotta, cream cheese (is that cheese?)
a couple months ago I had this cheese called Marco Polo - it was a creamy white cheese (like a havarti or Port Salut) but with green & black peppercorns - wonderful. Store hasn't had it again since though.

You guys are torturing me as cheese and dairy is a mild allergen for me, yes.. to a lesser extent goat cheese.
Now... I stray from the diet pretty often and then I like to eat the following kind of cheese
- herbed farmer's cheese (both cow's but esp goat's or sheep's)
- smoked cheese .. it turns into some kind of cheese crisps when you put it in the microwave for a minute
- feta , again esp the REAL sheep feta.. so much tastier! But alas, sooo much more expensive
- ricotta.. somehow I never eat it but when I eat it.. wowie!
- cottage cheese ... it's expensive here, so that's also a yum choice esp in fruit omelettes, but that extends to mozzarella that melts so wonderfully in eggs.. can be used for both sweet as well as savoury omelettes
- REALLY OLD Gouda cheese.. there's 'fake' old cheese now (ripened superfast with some kind of procedure) which is quite a bit cheaper than the 'regular' old cheese. Name is 'Old Amsterdam' .
I have a complete and TOTAL weakness for Swiss cheese. Smells horrible .. but it's the taste and those cute holes in it that do me in every time *drools* .. I also LOVE some fresh blue cheese crumbled on salads .. delish!!
My husband and I went out for brunch yesterday (a complete rarity for us) and started our meal with a cheese course. We had tastes of six different cheeses, mostly locally made. Some cow, some goat, some sheep. Served with a bit of peach and cherry preserves, it was heaven on earth!
The grocery store had a tasting out this weekend of an aged goat cheese from Holland. Very good. It was firm like a jack or gouda and very white. Not soft like chevre at all.
I lurve cheese esp. the lotsa fat double-cream or triple-cream french cheeses that are soft and yummy. The only cheese I don't like is cottage cheese cuz the curds freak me out - it's Cthulthu cheese!
That reminds me, I've got to get some more of that one goat cheese at the store with the flower petals on it - has a creamy, lemony taste that is so delish in the summertime!
