Coconut Milk "Ice Cream"

I'm good with dairy, but I love coconut milk and all things coconut. I'm going to get some tomorrow...

Does soy count? I wouldn't know where to get it, but I had THE best stuff in Taiwan. Those Buddist monks (not to be confused with those Terry Monks) sure know how to turn some culinary tricks with soy (like imitation crab meat *nom*).

Most of the time, when I want ice cream but not dairy, I'm simply going for sherbet (sherbert?). But this one sounds pretty good too and would cater to those wanting something creamier which is what fats bring & sets real (dairy-based) ice cream apart from fruit sherbe(r)ts

You mean sorbet. Sherbet is low fat milk and egg based, rather than the cream in ice cream.

Didn't even know that sherbet was different from sorbet when it comes to what is inside.
I meant a concoction of just fruit alone or fruit plus sugars.

sorbet = teh yum and has been one of my favorite desserts forever... esp with almond biscotti.
