Default Fat is not the enemy

This book is an excellent read that makes scientific data easy to understand.

Fat is Not The Enemy by Gerda Endemann. “Fat is not the Enemy” was written in order to provide an accurate account of scientific research on fat nutrition and to help people learn the simple facts that will enable them to eat both for good health and for pleasure.

Excerpt from CH. 1 Calories, Not Fat, Make People Fat:

Diets with a gimmick, such as cutting out all fat or all carbohydrate, do not work because of any mysterious effect on your metabolism; they simply result in consumption of fewer calories! It is very difficult to load up on calories on a fat-free diet consisting of grains and vegetables such as the Ornish diet. Surprisingly, it is also very difficult to eat a lot on the Atkins carbohydrate free, high fat diet. The most palatable and easy to consume foods are combinations of fat, protein, and carbohydrate, not foods lacking on of these normal components.
