Default Dinners?

what does everyone have for dinner?
I need at least 3-4 different options as my family is getting bored eating roast chicken and potatoes with vegies and/or green salad.

This dinner can last up to 3 days, but I'm the only one who doesn't mind left overs.

Then there is pot roast or steak with vegies/salad.

Pasta with tomato sauce and vegies.

Bean soup.

I don't mind these options, but my family wants more variety.
They like heavy foods which isn't at all healthy... so what do I do?
I don't like the idea of cooking one dinner for me and one for them.

HELP!!

I have a rotation of about 5-6 main meals for dinner mostly composed around the meat+veggies+sauce/flavor-family construction. About 5 occasional meals (couple times a month) for variety. I don't have starches in the rotation as my household is doing without but it would be easy enough to add one in as appropriate.

The frozen fish department at Kroger is one of my best friends. In the last few weeks we've had shark, yellowtail tuna, mahi mahi, flounder, salmon, scallops, shrimp, grouper, and probably a couple others that I can't think of. It is expensive sometimes, but watch for it to go on sale. This past weekend it was all buy 1 get 1 free, so we stocked up.

It's all very easy to make. Put it in the fridge the night before so it can be thawing, then bake it in the oven the next night. Cooking times vary from 15-35 minutes.

Last night with the shark we had steamed cauliflower and squash. We also just recently got into acorn squash. Wife stuffed them with walnuts, ground turkey, a few spices, and topped them with a little bit of cheese.

How about stuffed green peppers? It's like meatloaf in a nice edible container.

Spaghetti squash is another one of our favorites. Scrape it out and top with any kind of spaghetti sauce. Then mix in some of the small bay scallops (after cooking them of course).

This past weekend we had flopovers. Take a whole wheat tortilla shell, toss in some cheese. Heat in the skillet to melt the cheese, then add some ground turkey (brown the turkey before you start with the tortillas). Top it with salsa/sour cream/guacamole/hot sauce or whatever else you might have lying around. Depending on what ingredients you get, these can be really high or really low calorie.

Cooking Light is a good magazine with some pretty decent recipes and no ads, either.
