nutrition claims with grain salt
In a special edition of Scientific American (looking at diet and health) there is a good article by the editors titled Take Nutrition Claims with a Grain of Salt. The article discusses on how science is often swayed and biased in favor of certain claims. This is obvious with all fields, but I doubt if it is more prevalent anywhere than it is in the nutrition industry.
The magazine is currently on the stands. It’s a good read.
From Take Nutrition claims with a Grain of Salt
“the commercial success of food products depends on what science says about the effects of these foods on health. Yet all too often the sources of the science are the commercial interests themselves.”
