Has anyone else noticed this? When I follow a routine that is more hypertrophy based (higher rep ranges) I get incredibly hungry. Whereas in the lower rep, more strength based routines I can control my diet better.

Higher rep hypertrophy works tends to deplete more energy stores, causing the body to want more food, which is what you want. Heavier, lower volume routines cause more neural fatigue, which makes you tired, not hungry. Another reason heavier weights are better when trying to lose weight.

That makes sense. I'll have to make some adjustments. Thanks.

Its no wonder I can fall asleep in the gym some times then! Never thought of that aspect of neural fatigue

It's true, when I do a lighter, fast paced training session with high intensiveness I come and just want to eat everything, I'm too wired to sleep. But after a heavy ass squat session all I want to do is sleep.

Yup, lower-rep stuff keeps you more in the phosphagen energy system, which is where you'd be concerned with things like nervous system fatigue and creatine, etc. But hypertrophy work quickly carries you out of this zone and into the glycolytic energy system, which requires things like carbohydrates. Once the stores for that system are depleted, you get HUNRGY.
