Has anyone had any luck or ideas about how to make eggs either scrambled or omlette's ahead of time and freezing them for later consumption? I've been buying these frozen ham 'n cheese omlettes and microwaving them either at home or at work for a high-protein breakfast. But I'm concerned with the amount of sat fat and/or preservatives in them and them not being the best choice. Plus they aren't that cheap. So maybe I'll make a few on a Sunday, as most people suggest, and eat them throughout the week.
Maybe I'll just make some up and freeze or refrigerate and see how they come out. But I just thought I'd see if anyone already does that or has tried it in the past.

I would try refrigerating them first. They should last 4 or 5 days no problem. What about hardboiled eggs? Those last and can be eaten fast and are portable.
As long as you're going to eat them relatively quickly, you could make a few omelettes and freeze them.
The quickest and easiest way to individually freeze them is to use a metal cookie sheet that fits flat in the freezer. Cook the omelettes, then space a couple out on the cookie sheet and stick it in the freezer. The metal conducts the heat away and they will be frozen quickly. Use a spatula to pry them off and individually wrap them for microwaving.
Because they're not IQF or wrapped without air, they'll get freezer burnt if you don't use them in a week or two.
Great tips...I'll have to try both refrigerating them as well as freezing and let you guys know how they turn out.

according to your link, cooked eggs should NOT be frozen... but it seems like more people are in favor of freezing than not. isn't that what dunkin donuts does for their egg & cheese sandwiches?

I have frozen scrambled eggs with peppers/onions. I made enough for the week. I found that they taste fine when you reheat them but there is a fair amount of water that they hold from freezing. So once you heat them you just have to drain the water off. I premake everything for the week except for my eggs.
