make sure the tension on the springs is loose. when you have the $, switch to speedplay pedals. double sided entry and easy to clip in and out of.

Practice, practice, practice. I have the double sided entry and got a hang of it after a few tries. I did fall over a few times at first though.

Good suggestions from everyone here Silas. Loosen the tension so it is very loose. I'm going to assume you have SPDs, the most common kind. I'll second the Speedplays if you weigh less than 200 - some people heavier than that start to complain about hot spots due to lack of platform - overcome if you have a very stiff (and expensive) shoe. But speedplays are the easiest in and out by far.

Also practice clipping in and out while stopped with the other leg on the ground. It will allow you to get the hang of clipping in and out.

My pedals are a Shimano PD-M515 if this helps. Are they a speadplay pedal?

No those are SPDs. Grab an allen wrench an loosen the tension springs they attach to. Loosen them as much as you can without the bolt coming out. Then see how easy it is to clip in and out. After a while, you can tighten the tension again.
