I know, my mother always told me, never trust a skinny chef... A lot of Ina's food is actually not that bad, I sub out the butter with a smart balance vegan substitute that works really well. Beef and Butternut Squash Stew

Ingredients

  • 3 tablespoon olive oil
  • 1 onion, peeled and chopped
  • 2 cloves garlic, chopped
  • 1 tablespoon minced fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 2 pounds stew beef, cut into 2-inch cubes
  • 1/2 teaspoon salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper, plus more to taste
  • 2 tablespoons all-purpose flour
  • 1 cup Marsala wine
  • 1 pound butternut squash, trimmed and cut into 2-inch cubes
  • 1/4 cup chopped sun-dried tomatoes
  • 3 to 4 cups beef broth
  • 2 tablespoons fresh chopped flat-leaf parsley
  • Crusty bread, for serving
Directions

In a large soup pot heat 3 tablespoons of olive oil over medium heat. Add the onions, garlic, rosemary, and thyme and saute until the onions are tender, about 2 minutes. Toss the beef cubes in salt and pepper and flour. Turn up the heat to med-high and add the beef to the pot. Cook until the beef is browned and golden around the edges, about 5 minutes. Add the Marsala wine. Using a wooden spoon, gently stir up all the brown bits off the bottom of the pan. Add the butternut squash and sun-dried tomatoes and stir to combine. Add enough beef broth to just cover the beef and squash. Bring the stew to a boil over high heat, then reduce the heat to low and simmer, covered, for 1 hour. Season the stew with additional salt and pepper to taste. Sprinkle with the chopped parsley. Serve with crusty bread alongside.

OMFG! I am SOOOOO glad my diet has been changed so I can eat carbs again. Otherwise I would have DIED coming to this thread with all the talk about amazing carb foods.

Oh and I am TOTALLY trying this beef and butternut squash stew.

Lol...Karla...I was just in time!

So, in terms of my "progress" it is now clouded by my AF who shall be with me momentarily. So, here are the last few days in food it was NOT a pretty weekend. I gave a baby shower for a friend of mine and was on my feet literally ALL DAY on Saturday. The food was from a Kosher deli...not the best choices, but I didn't do too badly considering. That's why there's no "logged" food for saturday!

Friday 9-11-09
Friday Weight: 311.6 (the bloat is on!)
Calories: 1520
Fats: 78.5
Carbs: 118.8
Protein: 80.8

Saturday 9-12-09

Saturday Weight: 312.6
Breakfast: French Vanilla Decaf instant coffee
Lunch: 2 pigs in a blanket, 2 small potato pancakes, cucumber salad, Dinner: small serving of crazy awesome noodles and 5 egg rolls (small ones about an inch each)

Saturday Workout: on my feet running around from 9am to 6pm!!! I wish I had photos it was really awesome!!!

Sunday 9-13-09

Sunday Weight: 312.6
Calories: 2054 (SUPER WHOOPS)
Fats: 60.7
Carbs: 271.6 (WHOOPS)
Protein: 104.4

Yeah...Sunday was not my best showing...ROFL!

Anyway...back to the grind, I have my first (and only) class tonight for school, Oceanography...I was thinking OH COOL...marine life and the Galapagos etc...nope...shifting underwater plates, ocean bottom topography and water salinization levels. Oh goody! Kill me now. Plus, I had missed the REAL first class cause I was on vacation...and I always write to the professors ahead of time to check and make sure it's ok, since they usually only hand out the syllabus so it's pretty much a wash class, so anyway, this guy never wrote back. Which pretty much tells that either he's ANCIENT and doesn't do email...which will suck, OR he's a big A-Hole and hates me already for missing the first class. I'm hoping I'm wrong on both accounts!

Also interesting to note...even after all those extra carbs, my weight this morning is:

313.4

(which is only 3+lbs from my 310...which was 2 lbs DOWN from after vacation. So...I'm interested to see where is goes from here!)

I was thinking it'd be MUCH more...considering I'm still accumulating AF bloat, and over 200g of carbs??? Maybe it will all hit tomorrow?

What is really is is that I wanted to stage and experiment like Tom...yeah that's it...this is the "Risotto Experiment." I hypothesize that tomorrow my weight will go up exponentially!

Heehee...I have my shiney new notebook and pens and highlighters! I did forget my textbook tho...DUH...oh well...I thought I was all prepared. I was too busy focusing on the food I needed to bring with me to get my healthy snack on! Stoopid 6-9pm classes!!!! Zzzzzzzzzzzzzzzzz...

Didn't they explain in the school catalog what to expect for the course?
That's pretty much what I'd expect for oceanography. I'm guessing it is probably a "not for majors" survey course? I'm sure marine ecosystems and marine life will be a chapter or two in the course though. But plates, topography, vulcanism, vents, currents, weather systems - that's what I'd expect. I'm sure it can be pretty interesting - the science channel shows about those subjects can be good.

The catalog explanation was sorta vague, but did mention some marine life studies, I personally think so that people would sign up! It's the only class that fulfills my "science" requirement that I have been avoiding. So yeah...it's a science for dummies class! They pretty much invented it for the Art majors I'm sure! I thankfully avoided chemistry and physics in high school and I was NOT about to take them now! So...it's this class or no diploma! I'm sure it will be fine...but I'm more of a national geographic watcher, you can ask me the behavioral habits of a marmoset, but don't ask me about weather systems...lol!

Bosu Ball Step Ups x 20 each leg

Standing on Bosu:
Squat then twist holding 25lb plate x 25

The ab exercise…SUCKED. But…it just proved that I need it more…so there will be more of these in my near future I’m sure. Needless to say Charlie is ready to whip my ass back into shape. Today was a good workout, it was the first time since vacation that I actually felt like I had some energy. Can’t wait to see what Thursday holds!!

My current schedule will have me training in the morning on Tuesdays and Thursdays and then I’ll be working in cardio around that. I may end up doing double days again when I have my energy back where I workout in the AM and then go back after work. We’ll see how it goes. I am mainly looking to get my boxing form/stamina back together since it’s a little pathetic right now…and get a little more into the tire flipping on my own. Making it a twice or three times a week exercise for me at some point. I’m just happy to be back in the game!!!!!!!!!!!!

Default Non Fitness Related Rant

Ok...So...in the words of my co-worker THIS REALLY FROSTS MY COOKIES...

Classes for me start in the last week of August, and due to my job, where I work till the week BEFORE the last week of August, this is the only week I can take a vacation. SO...I do. I usually miss the first class, which is not usually such a big deal, they mostly just go over the syllabus, and discuss any projects etc.

SO...my new class the Oceanography one...I email the professer (like I have for the last few summers) and I apologize for not being able to be at the first class, and I ask if there are any assignments that I should be aware of for the second class. (third really cause there's not class on memorial day but you get what I mean) He does not respond. I assume this means that there are no assignments due. I am happy, and I enjoy my vacation.

I get to class yesterday only to find out that there is a QUIZ. That he told the class about at the first class. Ok...so...did he not get my email? I write him an email last night about a quiestion from class, using the same email account I had initially written to him from. He responds puntctually, this afternoon. I thinks...hmmmm...that's odd...WHY IGNORE MY FIRST QUESTION?

I am annoyed because...we get to drop the lowest quiz grade, and surely this was it...which leaves me at a disadvantage for the rest of the semester. AND he is a stickler this guy...he takes attendance at the beginning of class, AND 5 mins before the end. (WHAT AN A-HOLE) He walks out into the courtyard when the break is nearing it's end to gather his students back into the classroom, (most of whom are adults who work full time jobs during the day and are more than capable of coming back in at the designated time) and his poweerpoint presentations are boring as hell and he basically reads them to us (they're adapted straight outta the damn book too) and flips the pages so fast you can't even copy everything down and doesn't provide them on paper.

So...for such a rule follower....WHY NOT REPLY TO MY FUCKING EMAIL AND LET ME BE CONSCIENTIOUS AND STUDY FOR MY QUIZ?

I hate not being prepared and I clearly cared enough to write you an email and apologize for missing the first class and ASKED ABOUT ANY ASSIGNMENTS? So...did this guy just drop the ball or what???

That's what frosts my cookies today. For now.

That SUCKS about the prof! I hate being treated like a child, and his ignoring your first email was rude. Did you ask him if he got it, or explain to him that you'd emailed him and never got a reply or else you'd have tried to prepare or make arrangements for the quiz?!?!?

Ugh. Boring too-fast ppts are the worst, and roll-call at the end of class!?!?! Sheesh!

I once had a grad school prof tell me, before the semester even started, that it was ok to take the final early (so we could go on vacay). Paid for the tickets, etc... then she had a cow and got mad at me for making her prepare the final early (she forgot she'd said ok). Ugh.

Your prof SUCKS!!!

If you aren't graded on attendance (and at most schools you are not) it might be some new census requirement from the school to take the attendance twice to catch any latecomers to boost the census. The class census numbers can be important to the school for state funding. If this is the case, it probably will only persist for the first couple of weeks until the official census date is in the past.

In my humble opinion, professors tend to go one of two ways: either they are these awesome dedicated professionals that will be an inspiration for life and create tiny miracles in whomever they touch. . or they are these academic weirdos that get an inflated sense of power and cease to make any meaningful contribution to society about 28 seconds after they receive tenure.

Unfortunately an awful lot of them fall into the latter category

Sorry about the crap for class. Until you mentioned he answered another email I was going to say maybe he never read emails (I had one like that last semester). Sorry he screwed you over on the quiz. Hope the rest of the semester goes better!

My feeling exactly, I'm 31...not a college student, it's a night class, we're not idiots. I Did email him asking if he had received my initial email...and he HASN'T responded? Now who's the child??? A-hole. Well...I'll just have to study my ass of and KILL his tests. That'll teach him.

That's really interesting...I wonder if he will keep it up...also, I read through the student handbook, and the policy on attendance is that it has to be clearly spelled out on his syllabus. Because if it's not they're apparently not allowed to count it against your grade! Verbal is not good enough it must be clearly written...hehehehe. SO TRUE! I can only count on one hand the teachers I have had who have made a true impact on my life. It's really unfortunate that they sometimes don't remember how important their job is.

I hear you on being frustrated. And he doesn't sound like someone who rakes in teacher of the year awards.

But ... being devil's advocate for a moment:
Think about it. If he had told you (and only you) a week before classes started that there would be a quiz at class meeting #2 and other students got wind of it ... don't you think there'd be a flap that you received extra time for the quiz?

He probably should have answered your email, but if he did, all he really could have told you was that he couldn't comment on whether there would be an assignment or not but to check back with him the day after the class.

It may be that he doesn't read his faculty email between terms (because what would someone write him about) and he may just clear his inbox the night before classes resume so he can keep current.

I see your point, and yes that would totally make sense, but I emailed him the Friday before class, so all he'd have to do was wait till that night and tell me after the class had been in session already. Plus, they are supposed to be available (according to school policy) for questions up to 3 weeks out from the semester because people are trying to get into classes and re-work their schedules since you sign up for the Fall semester so early. Also they are in the building and their offices the week before class for faculty meetings and office hours. So....he's not entirely off the hook there either...

I absolutely would not want to give one student more time than another for sure, but we're talking one weekend here...so...still not a nice move. Rude for sure. My guess is that he has such ego (as I have now witnessed) that he took offense at my initial absence, and therefore deemed me unworthy of the heads up about the test.

Either way, I will win...I am a Capricorn, stubborn as hell and twice as determined...so...he's in trouble, and my grade will be an A...oh yes it will.

I would be careful to put malicious intent where you certainly cannot be sure of. Just sayin' … I mean, sure it comes off kinda pissy, but truly the problem is yours, not his. You missed class, and that's that. I'm just not sure it gets you anywhere to be mad at him when you made your choice. Don't get me wrong, I'd feel the same way… but end of the day taking responsibility and control (and actually, blame) will be good for you. easier said than done, sure.

(And yes, I did just come off colossally bitchy and superior there, didn't I? It's a gift. I know you're impressed, no need to hide it.)
