Today I made an old family recipe slightly adapted to fit the macros. We call it Peas and Rice. It's made with ground beef (extra lean 4% fat, of course) and onions in a tomato based sauce seasoned with allspice, cinnamon, garlic and black pepper. Frozen green peas are added during the last 5-10 minutes of cooking time so they are nice and bright green. Then it's served over rice pilaf usually, but I just had plain brown basmati today and it was good! Tonight, I'm enjoying a cup of English Toffee tea. I actually added a 6th fish oil capsule because my fat was under by 1 gram! I figured that'd be the easiest way to add a gram of healthy fat. It bumped today's calories to 1261, but my weekly average is still under 1250 so I'm still considering it compliance.
You are doing so awesome! I saw your pics on Leigh's blog and you look great. I am also really enjoying your cooking adventures. I tried something similar to the OBM one day this week and I liked it. I made a 9x13 dish of roasted cod w/tomatoes, asparagus, and broccoli, olive oil, thyme, and black pepper. There is something very satisfying to look at it and know you get to eat all that!

Today was another split meal day. I laid out 3 meals that were each different. We went to the mountains and hiked to a waterfall so I had to pack my lunch. I made a tuna sandwich with cottage cheese instead of mayo and sliced cucumbers on the side. Yum! Breakfast was my usual high protein high fiber cereal with milk which I ate before heading to the gym to workout followed by a PWO shake. Supper was the rest of the tuna/cc and cukes along with a MacIntosh apple, some strawberries and 2 Tbsp of peanut butter. All great meal choices for a crazy day! I wish I had taken a picture but I didn't have time. I may repeat this meal another day this week just so I can take a picture!! Tomorrow is pumpkin pancakes, bacon and fresh strawberries.

Hi Pauline! Popping in to say 'hi' back. You guys are all doing so well on your challenge. 100% compliance and only one week to go...that is quite an accomplishment. I can't even keep my hands out of my bf's Cheez Its (he went out of town for the weekend but left the Cheez Its in plain site!)

I'm not exactly sure when it will start. The last check in for the 30 day challenge is this Saturday. I'm not sure if Leigh will suggest a rest week or something before jumping into the new training/bulk plan. I'm really excited to see the plan Leigh is working up for me.

Today turned out to be a little crazy menu-wise, but I got my macros dead on and my calories were great, so it's OK!

I really was about to abandon doing flexibility/foam rolling due to staying up too late last night and wanting to play a game with my husband and son on their day off. I did it anyway, and I'm glad I did!
Pushups: 10 was my best set today.
Today's weight: 104.25 (crazy scale...how I dropped a pound in one day I don't know. It'll be interesting to see what it says tomorrow.)
You are doing so well in this challenge and I will also be watching your upcoming bulk. It will be interesting and a learning experience, all rolled into one! Nice work.

Well, I didn't reach my fat loss goals yet. My brain jumped ahead to the next stage and somehow I just followed right along, knowing that I still needed to really be focused on fat loss. Funny how easy it is to talk yourself into eating MORE! I don't want to gain too much fat when I start increasing. I just played Settlers of Catan for the first time this past weekend. My nephew brought it over. We had a lot of fun. Napoleonic Wars is pretty involved, but I'm slowly learning the ropes.

Civ IV's an excellent game. Haven't heard of the one you're talking about though (Catan). What's it like? (In my youth my brother and I would play all the Avalon Hill games, like Panzer Blitz, Blitzkrieg etc).

Today was a split menu day that involved no cooking and consisted of my regular breakfast cereal, tuna mixed with cottage cheese sandwich, tuna and tomato snack, a protein shake, and another snack of apples, strawberries, and peanut butter. Macros were dead on with no cooking! It was a nice break.

ST was great. Energy was high.
Ooh, another Civ IV fan! I looove that game! Time stealer x10 though. Settlers of Catan is sorta like Civ IV but with a board, cards, dice, etc. Way fun! I didn't find cool games till my adulthood--RoboRally and Filthy Rich: The 3D Game of Capitalism--are two more of my favorites!
If you want a time-stealer, try World of Warcraft or Everquest 2 lol.

Hi there. I know I was just in here yesterday, but I wanted to tell you thank you. I just ravaged through and am borrowing some of your recipes. I am getting a little antsy with some of my eatings this week and would like to run a couple of these recipes by my trainer to see if I can work them in. Just wanted to let you know. You attention to detail is going to make my eating a tad more enjoyable!

A whole day of no cooking? That sounds fantastic. I'm not sure I could ever make that happen while meeting all my macros. Just too picky of an eater with too many allergies.
How exciting - a bulk! I hope to get to that point someday myself.

Thanks, Bree. I'm actually quite happy with where I am right now. I'm not sure how much bulking I really need to do other than correcting some weaknesses and symmetry issues. I'm sure Leigh will fill me in.

Christina, I sit at my computer goofing around on SparkPeople trying to fit things into the correct macros and calories. Kind of like doing a puzzle - I sure do weird things for grins lately... Seriously, though, sometimes I just don't feel like cooking at all. It's nice to have an alternate plan sometimes.
ST? I really feel like I should know this, but all I can come up with is shock therapy . Did I mention it's hard to think today ?
Ginger, Pauline has been a tremendous help with my cooking and meals during this challenge, too. I even figured out how to make a decent gravy substitute with potatoes boiled in chicken broth and it saved me from certain demise to be able to have gravy just one time this challenge .
