Karla, I did try some of your cottage cheese "ice cream" last week. It wasn't the same as the real thing (as I already knew), but it worked in a pinch. The kids wouldn't eat it, but they don't eat cottage cheese unless it's well-hidden in something else anyway.
I'm interested to find out what route you take with your training and how the big baking contest goes.
Great job and exciting news for you. It proves that with hard work and consistency all things are possible. Even a future change of careers. If not now maybe years down the road.
You have made some posts about being in the industry. Do you still train clients? How often do you do it? I would only be interested in doing it part-time if I decide to do it. I also would not be interested in doing it without a good deal more education.
I don't do much training these days, as my current job is more disease/rehab and wellness programming oriented (I work for a medical fitness center owned by a hospital). I end up doing a few assessments and exercise programs here and there, and I've kept my PT cert current, but I just don't have time to do any significant personal training "on the side" of my real job right now. To get into the field, I went back to school for my master's degree (already had one in a different field - this was my 2nd and LAST journey back to school ) because I wanted to make fitness and wellness my career, not "just" a hobby... but you certainly wouldn't have to get a master's to become a trainer, since you already have a career you love!

Hi Karla, I have been reading a little of your posts re: becoming a trainer. Just based on the advice and knowledge you give on this forum I would think you would make an excellent trainer. You seem to have a passion for it and would be inspiring to others. Just my two cents. Also, it must be so rewarding to love what you see in the mirror! Congrats
Moist and chewy with a hint of sweetness and my favourite - dried sour cherries. Now the ones I used don't have any sugar added, however, the calorie count I used is from a commercially available cherry (which uses cane sugar). I suppose people will substitute the fruits and nuts they have and/or enjoy more. I added a sweetener (dulce de leche) but with sweeter dried fruit you could probably drop it.
I think from a grab and go perspective these are a better choice. The oat scones are also good, but I still find them an acquired taste. I suspect in the end I'll make more of these (just love putting the dried cherries in things). I'm still thinking on the muffin....
I love the dried sour cherries too. I have a bunch that don't have any sugar on them, so that would be a great way to use some before they go bad! I like to put them in my 0% fage with some honey. Very tasty!
If you have room in the fridge they shouldn't go bad (assuming they're well dried). I thought I was out from last year's batch and found a small amount today when I was taking the other ones back. I've only ever had problems with dried tomatoes (my fault, since they were too big to dry, took too long, I had problems in the dehydrator). I still tend to package them in smaller amounts just in case though.

I generally think 'not worth it' instead of bad. I'm going to meet people for lunch on Saturday and found the menu of where we're meeting online. I did find something that sounds good (beef provolone panini - 450), however, I think they're more well known for their sweet stuff. I looked out of curiosity since I'm not interested in having any. The cakes range from 390 (strawberry shortcake) to 1000 (chocolate cake). I think even if I was eating maintenance I wouldn't consider 1000 calories worth it for a single piece of cake.
If I do decide to have something sweet (will let my mood decide) I might try a lemon tart (220), but I suspect it will be too sweet for my tastes so I'm probably better leaving it be.

I am interested in the baking contest too especially since the weekend is almost upon us. I so rarely bake that I will be very surprised if my idea works. I'll use BrentV as the taster. I am also curious to see how the other thing plays out but that will happen in due time. I have a lot of work ahead of me before that happens.

Thanks for the long answer and the offer. I already know it can be very rewarding so I have some desire for it. I just have to weigh that desire with the rest of my life so I have some balance here and there.

Thanks for reading and posting. I cannot even begin to share the pure joy I have now RE my body. Guys I have abs. Seriously, every time I go into the bathroom where there is a mirror I pull up my shirt. I swear someone is going to catch me doing this sometime. I don't really care. I just have to look at them.

GREAT day today! I am really going to miss this mid-day workout thing I have going on right now. So I get to the gym and it is one of the most spectacular days you can imagine in downtown Portland. High 70's with breeze and bright sunny skies. I am a tiny bit early for my training so I decide I am going for a 10 or so minute run outside. Just as I am picking up my phone to tell my trainer to call me when he comes in as I am out on a run, he calls me. It turns out he is on his bike and has a flat and is having great troubles with it. He asks if I can push out for an hour. It happened earlier that my 2:00 appointment canceled so Uh HELL yeah I can. I went for a nice and wonderful 1 hour run in downtown. I ran through the Pearl and Chinatown and hit the waterfront where the Brewfest was going strong. I thought about Tom as I ran past the tables and tables of beer lovers all enjoying the tastes of local breweries. I ran all the way down by the river to the fountain and through it and turned around. The energy and beauty of the city is almost impossible to describe. I saw trains, and boats and people running, walking and biking. It was so much fun.
When I returned to the gym my trainer was still not there so I sat down and drank a protein shake and did some people watching until he showed up. He finally showed up and we did some upper body workout stuff. We were both hungry when we started and a bit beat from our cardio sessions so we did some fairly intense bi and tri cable work and then went to go do some power lifting. He taught me how to do nice clean and jerks. I used the bar today only and did lots and lots of reps always improving my form and getting my leg out at the right time and keeping the elbows right, etc. It was a lot of fun.
One day I will visit the powerlifting gym on the other side of town just for fun.

my group of triathlon friends met in portland last year for the olympic tri out at blue lake, (midsummers). we happened upon brewfest. little did I know that those little "tastes" that I was getting for 1 wooden token apiece were 8-9% alcohol. I haven't been that trashed since college! trying to remember how to button your jeans in a porta potty is not exactly ok behavior for a woman of a certain age, lol.

Oh Wendy I can relate but what do you mean, "not appropriate behaviour for your age?" Don't you know that growing old is inevitable but maturity is an option?
I did 7 pull ups in a row last night in a row making a new record!! My trainer says that the lighter I get the better I will get at doing pull ups. Talk about a buzz-kill. Here I thought I was getting stronger and it is really more about getting lighter. LOL!
Took the bike to work this morning. It took a record amount of time. The first 7 miles kicked my ass. I felt like I was trying to ride through water. I figured that this was due to me not eating correctly or enough and nearly turned around. I was sweating like mad and my HR would not go down and the bike would not go forward. Finally I stopped to remove some clothing and I noticed that the front wheel was lose. It was actually rubbing really hard against the brake. So basically I rode that whole while with my front brake against me. Once this was fixed the rest of the ride was fun and fast. I am still a bit whipped though and plan to eat a lot today just to be sure I have a good ride home too.

I just had a most amazing and productive day. I love my life.... The weather was so beautiful today and so even though I had ridden 26 miles already for the day I still took an hour off from work and took a walk. I walked a different path than normal and ran into a blackberry patch that happened to be in the sun and it had such sweet blackberries on it. I ate a bunch of them.
The bike ride home was a pure joy. Sunshine with coolish air. I passed at least 3 guys on bikes! The grove was there and I was just loving the ride. On the very last 7 mile stretch a tractor passed me by at about 16 mph and pulled in front of me to allow the cars to pass him. At first I was bummed because I didn't want to be behind this tractor but then I realized that I was drafting from his wind. It was so easy to ride and keep up with him. I did this for about 2 miles. Now I totally understand why this is done in races. It almost made up for the wheel issue I had in the AM. When I arrived in the small town I live in I stopped in the little store and got a nice cold diet coke and some jerky and ate and drank that on the way home.
Once home the cool night air was making me chilly so I got nekid and jumped in the hottub. Then I put on my robe and picked cherries from my cherry tree and ate a bunch of them too. Fresh berries all day long from now until late September! Oh joy, oh joy. Then I went out to the garden and picked fresh spinach and butter lettuce and another sort of lettuce and made this amazing salad for tomorrow. I showered, got a good practice in on the guitar and played with Sherman for awhile. Now to play for awhile on the net before sleeping soundly for the night.
I got in 2200 kcals today which is probably just about perfect to help offset the near 5 hours of cardio that I did today. My belly is full and my day perfect. Life is good.

Hmmm so great to get a glimpse of a fulfilling day.
Drafting is awesome but scary too.. it took me years of practicing to do it w/o being scared. Never mind when in a car.. cars here are drafting too.. or actually it's tail-gating. Much different experience from drafting as a cyclist
Aren't sunkissed fruit , picked right when ripe like blackberries, peaches, cherries etc. etc. just the best?
