I love avocado and eat it just about daily on my grilled chicken or tuna sandwiches. Another favorite lunch is a can of tuna mixed with some cottage cheese, diced avocado, red onion, cilantro and southwest seasoning blend.

Lately I've also discovered warm avocados are delicious too. The other day in a restaurant I ordered a baked avocado salad - it was half of an avocado, baked and sliced, served over a bed of sauteed spinach with olive oil and garlic, diced tomatoes, some parmesan cheese, all drizzled with balsamic reduction. I also tried a recipe for mahi mahi baked in avocado-yogurt puree that was delicious - I'll be adding it to my blog very soon.
