To cut the sweetness try adding a vitamin C crystals. Of course, canning geek that I am realizes that not everyone keeps some handy.

I find pretty much all artificially sweetened items too sweet. The other way I overcome it is to use sour cherries and/or sour cherry concentrate in my shakes.
