I have a couple breakfasts I sort of standardly eat, with variations thereof.

One consists of 5 eggs, one yolk, 2 TBS buttermilk, and a rounded 1/4 tsp turmeric (anti-oxidant, anti-inflammatory, flavor and color) scrambled. Top with 1 cup of your favorite chunky salsa, warmed, and 1 cup of cooked spinach. 10 oz. orange juice w/pulp that has a rounded 1/4 tsp of good organic dried ginger stirred in (another good anti-ox and anti-inflam). Coffee with skim milk and 1/4 tsp organic cinnamon (cinn. reputed to improve insulin response and sensitivity and tastes great in coffee). The variation for this substitutes 1/2 cup homemade, low-fat ranch dressing for the salsa, and an apple instead of the o.j.

The other one is 1 cup 1% cottage cheese mixed with 1 cup lowfat yogurt, 3/4 cup blueberries, 3/4 cup tart cherries, a handful of chopped walnuts and almonds, and a bit of sweetener (not sugar of course) to taste. Coffee same as before. The fruit gets varied with raspberries, blackberries, or strawberries, and the nuts with raw pecans, sunflower seeds, and pumpkin seeds.

And of course, like jruck37 says, blender drinks in their many variations are great when you're in a hurry too.
