I find using the spray oil is a good way to use just a small amount of oil. A one-second spray is 7 calories and just a bit less than a gram of oil. By cooking your eggs that way, it makes a bit of a calorie difference over boiled or poached but not a very big one. Cooked egg tends to cling to EVERYTHING, so I always use a nonstick pan for eggs, with a spray of olive oil Pam.
The added ingredients are just to help keep it spraying consistently. The grain alcohol evaporates in the heat of cooking. The lecithin is an emulsifier that keeps the oil and alcohol suspended together in the propellant gas.
If you tried pouring a bit of oil from a bottle into the pan, you will end up using at least several grams. That's more calories and more fat.
Olive oil is one of the "good" fats -- it's mostly monounsaturated. But like any oil or fat, it has a high calorie concentration, so that's a consideration if you're trying to achieve a certain calorie count or a balance of protein, carb and fat. Do you have some dietary goals in mind?
