My favorites:
Fresh mozzarella (an Italian deli here makes their own).
Parmesan (the real stuff from Italy, not from the green box)
Pecorino Romano
Feta
Chevre
Sharp Canadian cheddar
I'm willing to try almost anything, though. As Tony Bourdain says, the stinkier, the better.
