I just went through
wikipedia's list of cheeses and thought hm, wonder what people eat on a regular basis, there is so much varieties to choose from. So what are you favorites that you have made a lasting part of your diet?
Here are mine:
paneer
cottage cheese
feta
ricotta
kashkaval (you can find it in some specialty stores in the US, but not worth the trouble for most US palettes)
mozarella (esp fresh buffalo)
parmigiano reggiano
manchego
sharp cheddar
bavaria blue
halumi
gruyere
labneh (yogurt cheese)
I am very proud of making great paneer and yogurt cheese, and I would live on those alone, if I could
