When I was vegan and working in San Antonio, I'd often have a breakfast taco of refried beans, cubed cooked potato & salsa in a corn or flour tortilla.
Cottage cheese & pineapple works for me when I'm tired of shakes.
If you're eating bread, grilled cheese or ham and cheese is good for breakfast. Or on an English muffin.
I have a problem with eggs in the morning too, but like them fine at other times. I do find though that hard boiled or egg salad in the morning is much better for me than something like scrambled - doesn't make me want to hurl.
