In my gym there is a mirror on the wall perpendicular to the wall the machines are on and I have to admit that I want to glance over to see if I'm going low enough, and sometimes I do. But when I do I can feel immediately that it wasn't the best idea and try to go by feel as much as possible. If you're using a power rack you can set the safety bars just below where the barbell hits when you're at or just below parallel. So, if the bar is coming very close to the safeties, you know you're going deep enough.
