You can try finding a few large tomatoes, make a hole at the top and scoop out some of the seeds/liquid. Make in a separate bowl-albacore white tuna, salt/pepper, cucumbers chopped up small, pickles, green/spring onions finely chopped, a little cottage cheese or yogurt. Toss all that around.. add a few drops of spicy mustard in the mix if it needs a kick. Start stuffing the tomato with the tuna mixture. When done, clean the tomato up for persentation, drizzle balsamic dressing over the top (olive oil and basamic vinigar w/salt and pepper + maybe a touch of dijon). serve stuffed tomato over a bed of greens and you have a yummy tomato tuna veggie delight!
