You could do as many as you can. You could do them assisted, if your gym has one of those assisted dip/chin-up machines. They also have elastic bands that help you do assisted chin-ups on a bar. You can do negative chinups/dips, where you kinda jump up, and just lower yourself slowly. You could also do it your way, resting and such.

I did a mixture. Did as many as I could body weight, then finished the set assisted. Did the same thing for the second set.

I'm sure any way is a good way though.
