On the cheese front, I admit to normally using a cheese blend to add to things. It's too easy (for me) to cut more than an ounce off the large block that's usually around. For the shredded stuff I can make sure I'm getting what I've planned. Sometimes when I'm uber ambitious I'll make my own blends using the full fat cheddar and a mix of other lower fat cheeses.

I understand the inability to limit certain foods. However, I do think that you need to find a way to work them in eventually. Otherwise you end up feeling deprived. I shouldn't admit this, but it is possible to buy a piece of a chocolate bar in the bulk store (only did it once, while I was buying other things).
