Made a variation last night.

It was tasty. Rolled Proscuito with some cheese. No trouble with it falling apart.

I think I am usually just way to excited to eat my meatloafs, so I don't let them sit long enough to really set up.

500g lean beef
2 eggs
1/2 onion
1 stalk of celery
handful sun dried tomatoes
2 slices Proscuitto
30g shredded cheese
1/2 cup OATS! <-- OH NOES! adds about 12g of carbses if you divide the meatloaf into 4. which I do.
