Obviously, you won't get the fiber and protein from nut oils.

I use walnut oil for most of my salads. It's pretty good tasting, too.

I also have a lot of fish oil capsules in a day (12-15, depending on what else I'm eating that day).

You could use straight fish oil, too, but you'd have to make sure that it's in something that would have a complimentary taste. You could add it to sauces for stir frys, but you should add it for flavor, not for the actual frying process. Fish oil should not be used for high heat cooking, although adding it to the sauce at the end shouldn't be a problem.
