I was wondering about that too, not sure if I came to a conclusion about it or not. But man I love those things. My favorite was
wrapping it around a Halibut steak, but I have also used them to make shrimp pizza which was good, but my wrap got a little soggy - should have coated it in a bit of olive oil first I think.
