Sour Flemish reds are a particular favorite of mine - still debating whether to take the plunge and put Duchesse de Bourgogne on tap at home.
I understand that many brewers got started by homebrewing, then progressively enlarging their operations until they'd volunteer/get a low level job at a local brewing establishment to learn the trade. Not sure if that's the route you were thinking about, but it's an option.
