Oh, I made pumpkin pancakes today and used the same spices I'd use for pumpkin pie: 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp cloves. I omitted the maple syrup because I didn't feel like getting a measuring spoon dirty. I cannot tell you how good pumpkin pie pancakes are! Ha, now it's Paula's Pumpkin Pie Protein Pancakes - talk about an alliteration.
