I made buckwheat pancakes last weekend and put aside two portions in the fridge for this week. I didn't freeze them but I thought they reheated just fine. I would think they'd reheat well. Most bread products freeze well so I don't think it would be a problem.
As far as the waffles go waffles usually have slightly different portions of ingredients. I would just compare a recipe for both pancakes and waffles and adjust accordingly. From what I remember waffle batter needs to be a little thicker and may have a little more fat.
