MIx pumpkin, egg whites, maple syrup, and spices together until fairly smooth. Add PP powder and mix until well combined.

Pour 2/3 cup batter onto griddle and cook like a regular pancake. Mine were 8 inch in diameter. If you want a smaller pancake, use 1/2 cup to ladle batter onto grill. (I used 1/2 cup slightly rounded and it made 6 pancakes). Flip when top begins to look set and almost dry.

Total recipe: 623 calories Protein: 85g Fat: 4g Carbohydrates: 48g
Per pancake (1/6 of batter): 104 calories Protein: 14g Fat: .66g Carbs: 8g
