Hi guys,

How's everybody doing? So far so good for me.

Anyway I thought I'd post a recipe tonight. I made a boatload of macaroni and cheese. I'm consolidating my food with the family's food so keep that in mind. If you want this as part of a big meal adjust portions accordingly.

475 g dry macaroni
82 g onion, diced
160 g cheddar cheese, grated
1 1/2 c milk (I used 2%)
2 cups of chicken broth
15 g butter
75 g of cornstarch
60 grams of breadcrumbs

Reserve some of the grated cheese and mix with bread crumbs. Cook the macaroni per directions on the package. Cook the onion in the butter. I make all my white sauces with at least half broth instead of 100% cream or milk and thicken with cornstarch. Add the broth and milk to the pan. Mix the cornstarch with a little water and add to pan. Cook until thick and bubbly. Remove from heat and add cheese and stir until melted. Combine cheese sauce and macaroni in a casserole dish, top with reserved bread crumbs and cheese topping. I bake at 350 till bubbly.

This made a big 4 quart casserole dish and the entire batch believe it or not weighed 2600 grams cooked. That's never happened to me before.

Total recipe:
Cals: 3,265.58 Protein 130.44 Fat: 83.8 Carbs: 488.77 Fiber 18.16

Per 100 grams serving:
Cals: 125.61 Protein: 5 grams Fat: 3.21 Carbs: 18.8 Fiber: 0.7

Example Big Meal:

600 grams of frozen broccoli,
500 grams of lean cooked ham
500 grams of homemade mac and cheese

1418.26 cals, 133 g protein, 43.52 g fat, carbs 128.57, fiber 22.76

This may be more carbs than some want. But it was good and easy.
