I usually use it anywhere that would normally call for cream cheese.

Veggie dip - mix in shredded carrot, cucumber (drain it to remove excess water), radish, green onion, or whatever veggies are on hand. Season well with salt and freshly ground pepper. Fresh herbs are nice, too. Great on crackers at a party.

Mix in fresh or frozen and thawed berries plus a bit of sugar or splenda. Spread on toast or bagels.

I think labneh will probably work in your cheesecake recipe, but it's hard to say what the results will be without knowing the recipe.
