My husband is not a big meatloaf lover. In fact as far as I can remember he always steered clear of it. Dinner time came around. I had ground turkey defrosted already. So, I decided to make it tailoring to my hubby's taste and his current low-carb diet (TNT's first four weeks of plan A). My daughter with new braces will appreciate this tender and juicy meal too
All I can say is this recipe is a keeper.
Tomato Topping:
Trader Joe's Fat Free Pizza Sauce
Meatloaf Mixture:
1 pound ground turkey
1 egg
1/4 cup grated Parmesan
1/4 cup red/white onion, diced small
1 cup
Melange A Trois (Red, Yellow, Green Bell Pepper Strips) finely chopped
1 tablespoons chopped fresh parsley leaves
1 clove garlic, minced
1/4 teaspoon dried basil (can be subbed with
this)
6-8 slices of bacon (or prosciutto, or any type of ham, thinly sliced)
4-6 slices of provolone cheese
Tony's (to taste)
Prep:
1. Preheat oven to 350 degrees F.
2. In a frying pan (sprayed with Olive oil) sauté Melange A Trois, onion, garlic, Dorot's Chopped Basil . Set aside. Let cool for 5 minutes.
3. In a large bowl, mix together the ground turkey, egg, Parmesan, sautéed vegetables, herbs, and seasonings.
4. Working on a waxed paper lined sheet pan or counter, form meatloaf mix into a 10 by 8-inch flat rectangle on the waxed paper. Place a layer of bacon slices on top, followed by a layer of provolone slices. Roll up the stuffed meatloaf mix like a burrito and seal the edges all around by pinching the meat.
5. Place the roll, seam side down, into a 5 by 9-inch loaf pan. Spread a heavy coat of the tomato topping to completely cover the top of the meatloaf. Place in oven and bake for about 1 hour and 15 minutes, or until the temperature on a meat thermometer registers 165 degrees F. Drain fat and let rest at least 10 minutes before slicing.
